Energy-boosting breakfast

I'm one of those who find it hard to get up, but once I'm up, there's no stopping me. I like to prepare breakfasts full of vitamins to keep my energy high all day long.
So today I bring you an easy to make, light and healthy breakfast to start your day off on the right foot.

Pancakes
Gluten and dairy free
Ingredients
250 g Buckwheat flour
A bit of salt
2 eggs
500 g vegetable milk (I really like them with soy or oat milk)
Mix the ingredients with a spatula.
Let the dough rest for a few minutes. In the meantime, you can cut small pieces of seasonal fruits (banana, strawberries, kiwi, mango, berries).
Heat a frying pan with a little coconut oil.
Add a spoonful of dough and let it cook.
Flip the pancake once you see that it is done on one side.
You can make as many pancakes as you want, depending on their size and thickness.
Between each pancake you can add a small piece of pure dark chocolate, agave syrup or tahini, and you can add the pieces of fruit on top or around it.
You can accompany the dish with a warm drink, matcha tea, herbal tea, coffee with vegetable milk, whatever you feel like.
